Jaleesa’s Luau

My sweet niece, Jaleesa, turns one tomorrow, but we celebrated a little early…Hawaii style…on the Fourth of July. 🙂 Jaleesa’s Mom and Dad spent six years in Hawaii, and brought a taste of the island back to us (they live in Illinois now, but their hearts will probably always be in Hawaii) in the form of pulled pork and fruit salad…and mixed in a bit of Joel’s Filipino cuisine…pancit and beef rolls. We get so spoiled when Joel visits (and for the record, I can bake cakes, but need a heck of a lot more practice at pancit!)…and are thankful for her leftovers. My first birthday party job, of course, was the cake…and you can’t make a luau cake without hibiscus flowers and grass skirts!!

The cake was marshmallow fondant covered, with gumpaste hibiscus flowers…vanilla cake with buttercream, chocolate cake with peanut butter filling, and chocolate cake with buttercream. You can’t attend a family function without chocolate and peanut butter somewhere, right??

 

This shot is a little dark, but…she kind of loved her smash cake. 🙂
